Hankering for paella and spanish Iberico

Decent paella at Torito. Pimenton has some sausage made from Iberico ham, but you might want to try some of the other high end places to find the ham itself.

Not quite downtown but maybe Cava? Or for takeout, there's also Pimenton on Mount Pleasant. I've never tried paella from either but I know they both make it and if the rest of their food is any indication, I'd say it's worth a try (and you seem to be up for that...:).

I'd recommend the paella from Pimenton. Jose (the chef) made a custom-made paella for us. It was delicious!

The fancy pants grocery stores sell Iberico on and off. So around downtown I'd say Pusatari's would be your best bet.
I've got nothing for the paella though. Personally, I've never had any luck in town.
