John Cope's Dried Sweet Corn
I am entirely unfamiliar with this product. There are two recipes on the container -- one for "stewed corn" (cooked with water on the stovetop) and one for "baked corn supreme" (baked with milk in the oven). Any ideas which is better? Other suggestions? Thanks.
My maternal grandmother had another alternative for preparing John Cope's corn. She would soak it in warm milk (not sure how long) then slowly cook it in a small amount of milk and water on top of the stove. She also at times would use the baked method but the corn was also pre-soaked in milk , that was my dad's favorite. It is a unique tasting dish. I was never a big fan of either
