LOL! Forgive me for laughing but I have a perverse sense of humor and/or a weird imagination. Now I'm wondering how you came about "recieving" this object? Was it a gift, or did you have an irresistible impulse at a garage sale? Just curious. '-)
Anyway, yes, "couscous" is prepared by steaming it over something stewing below, and is not necessarily the small grains of semolina that usually come to mind. Other "grains" and things can be "couscous." Paula Wolfert has written/published some excellent cookbooks on Moroccan and North African cuisine. I strongly recommend her, "Couscous and Other Good Food From Morocco." It shreds most of the common misunderstanding about couscous, specifically that it is a main course or even "the meal." Couscous traditionally is the final course at the end of a meal and there are a gazillion delicious ways of making it. Sounds like you have some fun in store. Enjoy!

caroline, first things first. the couscousier is a gift. when i said "received" i meant as a gift. my friends and i were in an email discussion on couscous. one of my friends is a very generous soul and she ordered a couscous pot for all 3 of us. i've had the quick cooking couscous. i need to find the kind that can steam in the couscous pot. thanks for your recommendations.
