What is your favorite brand of baking chocolate?
I tend to use Guittard. Callebaut, and Scharffen Berger, depending on what I find. I just heard about Valrhona. Im kind of having trouble settling on a brand given that I work out so I cant really bake much as its a rare treat for me. So its not easy to determine which brand is my favorite. Well my little brother's birthday is coming and Im looking to bake a chocolate cake for him but cant decide on the brand of chocolate. My little sister is also begging me to make chocolate chip cookies this weekend as well. I dont like brands that dont give me the cacao percentage. Ghiradelli, for example, doesn't do that a lot.
Does price matter? I like eGuittard wafers but rarely buy them because they're pricey for every day use. It's also harder to find--on occasion, I'll see it at World Market/Cost Plus. If price matters, I either chop Trader Joe's big block of chocolate (which is supposedly Callebaut) or use their chocolate chips. Or, I use regular Guittard chocolate chips but again, not easy to find, though much more reasonable than eGuittard in price. Valrhona is even more than eGuittard so that is a rare special occasion treat for me. Cutting your own chocolate for chocolate chip cookies is awesome--you get melted slivers of chocolate among large coarser chunks. If I have time, that's what I do.
The price is the least of my concerns. If its that good, I'll buy it. :) I actually cut my own chocolate and have never used chocolate chips before. Most of my experience is with Guittard though. Unlike you, I found Guittard incredibly easy to find. You got me curious about Valrhona. Im going to try it out.
