a friend gave me about 3 pounds of boiled peanuts, and while I love them it is going to take quite a while to eat 3 pounds of them. any idea how long they will keep in the fridge before they turn sour? can/should i freeze them? i do keep my refrigerator in the cooler range so that everything lasts longer, cuts food waste, but everything has it's limits.
I think freezing is a decent bet, but you might want to try a small amount frozen, just to do a texture check, because the freezer might compromise them. I don't think I'd keep them in the fridge for more than a week.
(Try putting a handful into a bottle - yes I said bottle - of Icy Freezy Co'Cola.) You will never look back.
the health safety people will say a week to 10 days refrigerated. that is what is on the packaging for commercially produced peanuts. you can freeze them for a year or more. i sell boiled peanuts and have kept and eaten them just fine out of the fridge for close to a month but i can't recommend that to customers. 10 days to be safe.
