Yes. They may have them packaged as "Bones for soup." You should be able to ask at the meat counter. Our local grocery stores still have a meatcutters on premise.

also if they have veal bones, those are LOADED w/ collagen and marrow. Just ask. Roasting the bones and veg. for the stock is the best advice you'll get, though

yep, plus a smear of tomato paste partway through roasting. But, I'm sure there are other threads for that... I haven't done a search, but recall reading some great advice here. Like simmering, clarifying, etc...

You can even pan roast that schmear of tomato paste in advance before adding

I did the same, but used additional beef broth. It is kind of weak, but you can make a broth. To make a rich stock, one needs bones like ipsedixit recommends, more marrow, collagen.
I threw in some meat bits as well.

You can but you really need some bones with more collagen or marrow.

The answer is yes! Just roast the bones for a few minutes to bring out the flavor of the bones before starting making the stock. What can it hurt to experiment?

I have a tradition of taking home the carcasses of Thanksgiving turkeys from our daughter's home and making turkey stock on the Friday after. The stock is used to make risotto among other dishes requiring stock (broth).
