I have some lovely almost sweet fresh ricotta from Coluccio's. What to do with it?

I am not a lasagna fan (I know, crazy talk, but it is what it is.) Any other ideas? It's really great ricotta. Maybe a lighter/less complicated pasta dish..?

    How about some cannolis? zeppole?

    Pasta dish - Rigatoni stirred with ricotta and spicy sausage and some raab?

      Not a pasta dish, but one of my faves. Drain, then garnish a scoop with a drizzle of honey, a dusting of cocoa, and maybe some toasted almonds. Nice light dessert.

      As far as pasta dishes go, stuffed shells? Manicotti? I like Novelli's suggestion alot...I usually use "little ears" (can't spell it's real name).

        Spread on toasted bread that has been rubbed with garlic and drizzled with olive oil. Sprinkle on salt and pepper. Eat. Or, add sauteed bitter greens too. Eat. Or, top with chopped, oil packed sun dried tomatoes. Eat.

          Definately agree with escond. Fresh ricotta as a spread is heaven. I'd go fig jam or a fresh sliced berry. Drizzle of honey or balsamic and call it lunch. No fuss.

          I love to whip some up with a bit of sugar, chocolate chips and candied orange peel. Cannoli filling without the shell.

            You could make ricotta/spinach gnocchi, also called "gnudi".

              a big scoop of ricotta on top of a plate of spaghetti with tomato sauce is really delicious!
