ISO: Chicken Knee Cartilage?
Does anyone know a butchers shop that would carry (most likely is large bulk bags) chicken knee cartilage. The piece of cartilage I am looking for is the articulation of the knee (between the thigh and drumstick).
I want to try and make Nankotsu Karaage. I know I can buy a bunch of chicken legs and de-bone them. But I think that would be more expensive.
I already checked at Famu and they said they do not carry it and will not special order it because they usually just sell the bones whole.
I also checked T&T (Thornhill) but they only sell stock bones (usually the spine), no knees.
Any suggestions/sightings before?

No north american butcher shop is going to do the work on this one. Think of how many chickens it'll take to fill up an entire bag's worth. Yakitori shops that'll sell cartilage on their menu will have done all the butchery of chicken in house, hence why they have all the assorted bits on the menu. Also why they tend to sell out quickest on the menu.
Basically you answered your own question, you have to do it on your own.
I would love to be proven wrong though.

I suggest that you try a Halal store. My cousin is a biology teacher and she occasionally picks up different organs and body parts for her lectures, specifically lamb and sheep. I'm thinking that you might be able to find what you're looking for at a Halal store. They're often very accommodating. Good Luck!
