Can I use demerara sugar in a chocolate chip cookie recipe?

I have had it in the cabinet for some recipe that I can't even remember. Going to make chocolate chip cookies this weekend and thought about using that sugar up. Thanks!

    I had a delicious cookie at Disneyland once that was made with some large-grain sugar. It had a very pleasing sugar-crystal crunch.
    Since I am a big nerd, I would probably measure the demerara by weight, since the volume measurement will be off, since the crystals are bigger.

      Yeah, I bet it'd taste even better. a little more molasses content.

          I agree with Caitlin that it will taste just fine. But you should keep in mind that most demeraras are large grain and may add a bit of crunch to your cookie. Nothing wrong with that; it's just that the cookie may not have the texture you're used to.

            Sure, it will work fine and taste good (like using light brown sugar).
