Can I use demerara sugar in a chocolate chip cookie recipe?

I have had it in the cabinet for some recipe that I can't even remember. Going to make chocolate chip cookies this weekend and thought about using that sugar up. Thanks!

  1. Sure, it will work fine and taste good (like using light brown sugar).

    1. I agree with Caitlin that it will taste just fine. But you should keep in mind that most demeraras are large grain and may add a bit of crunch to your cookie. Nothing wrong with that; it's just that the cookie may not have the texture you're used to.

        1. Yeah, I bet it'd taste even better. a little more molasses content.

          1. I had a delicious cookie at Disneyland once that was made with some large-grain sugar. It had a very pleasing sugar-crystal crunch.
            Since I am a big nerd, I would probably measure the demerara by weight, since the volume measurement will be off, since the crystals are bigger.
