pepin Essentials recipe sausage

The recipe calls for curing salt. Difficult to find. Can Kosher salt substitute for curing salt? Or any other kind?

    No.

    Curing salt is not table salt. It is a different chemical. You can do a search for curing salt on the net, I'm sure there are many vendors.

    Or, you can do like I do and find a local butcher that makes dried sausage and buy some there.

      I know it's not the same as table salt, but I was wondering if if there is a substitute for curing salt in making sausage. Can you use kosher salt for that purpose? I would just love to make Pepin's sausage recipe!

        Kosher salt is the same chemical compound as table salt, though it typically is not iodized. (iodine added). So no, it is not recommended for the purpose you mention. There is no substitute. Make a bad cured sausage and well, you'll know it.
