I have a bowl of solidified bone marrow

I've got some leftover bone marrow that I scraped out from about 7 pounds of beef bones (all of which went into a killer stock). Now I love marrow on toast as much as the next self-respecting carnivore, but I'm looking for some interesting recipes that incorporate marrow as a key ingredient. Also, does anyone know how long it'll keep in the fridge? I mean, it's almost entirely fat...

  1. I've heard it's really good incorporated into a risotto. It's something I've been meaning to try, but I don't often have bone marrow on hand. Jealous!

    1. on the chew the other day they stirred it in with an egg yolk, some garlic, lemon juice, olive oil, capers, and parsley and made a "Marrow-Naise" which sounded like it would be absolutely delicious on some thick, crispy fries.

      you could always pack some of it up and send it this way. im sure i could find a few pieces of toast to smother with it.
