Hi all. A couple of years ago I was looking thru a CH Board concerning black beans (I think). An individual from New York posted a reply that went something like this: "When I get home and I'm tired and don't want to do much, I open a can of black beans, cut 2 slices of bacon into 1/4" strips, cook the bacon till crispy and the fat rendered, add half a chopped onion, half a chopped bell pepper, sweat the veggies, add a tsp. of sherry vinegar to deglaze, some thyme, s&p, add the beans, heat through and eat them."

He put it differently but this was pretty much it, except he said he got the recipe from the wife of a Cuban chef.

I have tried more times than I can count to find that reply again but am unable to. I wanted to send him a special THANK YOU!! I pretty much followed his recipe but used Mas Portel sherry vinegar, and added some cumin. It has become a much requested regular side at our house and, when I'm in California visiting my son, after making it for the first time there, it has become a much requested side there.

Prior to reading that post, except for a notable side of black beans at Bueno Rico in Lake Tahoe, NV, MANY years ago, I'd never had black beans and certainly never attempted to cook them. I think this guy deserves a sincere THANK YOU but I can't find him. Can anyone help?

    1. That recipe sounds somewhat similar to what I made last night...and it was delicious. We didn't add rice...but it would be a good addition.
