What can I do with smoked fatback? Slice like bacon?
Dice for soups. Pea, potato, corn or seafood chowder, any soup with beans, ham, chili etc; any soup that starts with a dice of rendered fatback, salt pork or bacon, and will benefit from the smokiness.
