Cheesecake
A recent article in the Globe and Mail about the surge of innovative "takes" on the American cheesecake in Paris (of all places) got me wondering if there are any places in Montreal that are experimenting on pushing the cheesecake "envelope" or are especially focused on cheesecakes?

Not sure if it really fits what you're looking for, but one of my favourite cheesecakes is at Pintxo! I think it's a gelatin-based one, rather than baked; it's light and creamy and a little bit airy and creamy and SO delicious! I believe it has some kind of crumb crust and comes with a fruit coulis. Yum.

That was a very very good question, i did not ask, the filling was a classic cheese cake filling but much softer and creamier. the cake itself is kind of backward, graham crust, icing, then cheesecake filling and then on top fruits ( the ones i had where small red/orange fruits a tiny bit bigger than pomegranate seeds and extremely sour, which contrasted very well with the cheese cake.
word of warning, if you are looking for a Junior's or cheesecake factory type of cheese cake ( big, heavy and massive) this one is not what you are looking for!

broadway cheesecake downtown on president kennedy (quebec franchise which is expanding now beyond our borders) is a favourite of mine when I have a craving because of location, individual pucksize portions and variety which constantly changes. Nothing pushing the envelope as in the article but is ok by me. And the size is not gigantic!
