What's the ratio of liquid to rice for risotto?

If I'm using a cup of arborio rice, about how much liquid (wine + stock) should I expect to use? Thanks!

  1. I would say about 4cups of stock/wine (keep some extra on hand just in case).

    1. One cup of Arborio rice, 1/2 cup wine, 3 cups heated chicken or other stock.

      1. I agree that 1:3-3 1/2 is a good approximate starter amount, but you have to play it by eye, taste and rice texture as well. As Novelli states, wise to keep some extra hot stock available.

          That worked just fine -- I used a half cup of wine and about 3 cups of stock (I started with about 4 cups, almost at a simmer). Thanks to all!
