I'm a fan of Royal Pacific and New Golden Gate City for wok hai and both make a good dry fried beef chow fun.

The best dry-fried beef chow fun I've had in Boston isn't in Chinatown. It's at Kantin in the HKM food court in Packards Corner.

i was thinking this but thought it might be too down market. god, i love this and the singapore noodle (spicy) at Pho Viet, so much so that i dont end up exploring the rest of their menus.

Like Jenny Ondoline, of the chow foon's we have tried my husband and I prefer Kantin's as well so +1 for Kantin. I haven't eaten the chow foon at every Chinatown restaurant but of those I've had, Kantin's dry-fried beef is the best.

True... I wish it were saltier but you could bring a little of your own salt.

A few months ago I had the "Shredded beef with pickled mustard green fried rice noodle" at Cafe de Lulu, made with chow fun noodles, and I thought it was quite good. Cafe de Lulu might be a good option in general...

Thmor Dat, Cambodian in Revere makes an excellent version. Dok Bua, Thai in Brookline...think the Thai refer to it as "drunken noodles."
In Chinatown, best I've had is probably BLR. Winsor Cafe is tasty but lacked the "wok char" that I think elevates the dish and adds a new texture/flavor and is needed to get into the great category.

I haven't been in a while. But my favorite was always the one at Penang. Smaller portion but fantastic execution. Good luck!
