I'm a huge fan of Calexico (get their carne asada) and Korilla Korean BBQ. Love their steak (bulgogi). For dessert, Coolhaus is fun because you can customize your ice cream sandwich cookie and ice cream flavors, which are delicious!

The okonomiyaki from the Okadaman truck is very tasty and there usually isn't much of a wait. I also like Luke's Lobster if I'm feeling flush, but I usually don't have $18 to spend on lunch. Taim is also good, but the waits can get crazy. I also like MexiQue for pulled pork sliders.
I second the suggestion of checking out Midtown Lunch. They have a Twitter Tracker that aggregates locations and other updates from a huge number of food trucks. http://midtownlunch.com/twitter-tracker/

I have tried alot of the trucks in the midtown east since I work in the area but other than Taim mobile(high quality and fresh) and Wafels & Dinges(which is super over priced for what you get), none are worth more than 3 min wait. Those middle eastern carts meats are just greasy and not so good in my opinion.

Midtownlunch.com has good reviews of the trucks. Search for Vendy award winners on their site. Personally, I like Comme Ce, Comme Ca (Moroccan truck) and Qwik Meal (cart).

Yup, Samir's a cool dude. Another good Moroccan truck is the Bistro Truck.
Aside from midtown lunch's twitter tracker, there's the Tweat.it app that shows you what trucks are near you on a map. Be aware it sometimes doesn't list all the trucks and most carts. For example, the King of Falafel is never shown on the map, but he's in the same place everyday so it's nbd. I use both for finding lunch.
