Preacher Cake bake time

This recipe says to bake the cake for in between 30-45 minutes 'depending on variables.' The only variable in the recipe is to reduce the amount of sugar if desired.
"PREACHER CAKE: Combine dry ingredients; add remaining ingredients and mix by hand.
Bake in a 9 x 13 prepared pan at 350 degrees for 30-45 minutes - depending on variables. Do not over bake or it will be rubbery, but still delicious :)"
I don't want a rubbery cake. How will I know how long to bake without ruining a cake or two (unless I get lucky on the first try)?
It's kind of an interesting recipe with no liquid except for the can of pineapple in juice, and no oil/butter.
Does anyone know why this is called Preacher Cake?

Most likely "Preacher Cake" because it could be thrown together quickly with ingredients you had on hand if the preacher came to call. Variables would be how hot your oven's "350" is and how warm or cold it is in your house. Most likely bake until a toothpick or strand of dry spaghetti inserted in the center comes out clean.
