Fresh Thai Spring Rolls - favorite combos?

I am making fresh spring rolls tomorrow with a friend. Not fried, but the ones wrapped in softened rice paper. I wondered how people here liked to make them. Thank you!

  1. the classic is rice noodles, shrimp, cilantro and mint, with a sprinkling of chopped peanuts. lobster and crab will work too.

    you can also do all veggie, like an asian slaw.

    you don't want anything too heavy, to keep the skins from ripping.

    1. My wife and I like to make rice paper wraps with pretty much anything, but usually with a Korean influence.

      Here's a table full of filling suggestions
      Shredded cabbage
      grilled chicken
      stir fried beef
      steamed hot dog
      red chili pepper
      bell pepper (red & yellow)
      egg strips
      fish cakes strips

      1. I usually do:

        shrimp, rice noodles, green leaf lettuce, green onions, cilantro, mint, thai basil, a few drops of fish sauce, and sometimes carrots and cucumbers.. and I make an almond butter dipping sauce
