Identify this cooking show? [moved from Mountain States board]

Early to mid 90s cable cooking show. It was on either Bravo or A & E. Same female narrator every time, though you never saw her. Each episode featured a top chef of a fancy restaurant preparing one dish. From New York to New Orleans and everywhere in between. Elegant and straightforward. I remember the dishes were rich, fussy, and maybe a little pretentious. But I liked the complicated sauces and recipes and I just don't find this kind of food in cooking shows anymore. Anyone remember? Thanks!

        i loved it too. my mom even got me a couple of the "great chefs" cookbooks.
