Fat is the 6th Taste

A recent study appears to have identified a human receptor that allows us to taste fat. Pretty interesting.

    OK, so Saturday afternoon is probably not a good time to post a new thread. This is some really cool food dork stuff though - hence the bump.

      The science may be new, but we've known that "fat is flavor" for a long time.

          But, in a sense, that's truly the point. In other words, it's no wonder why "low fat" recipes taste like sh*t - they are missing a fundamental taste element and our palates recognize it. It's basically no different than not having any salt in a dish. It also suggests the science behind the ability to "train" one's tastes to not miss a flavor by eliminating it for long enough.
