But, in a sense, that's truly the point. In other words, it's no wonder why "low fat" recipes taste like sh*t - they are missing a fundamental taste element and our palates recognize it. It's basically no different than not having any salt in a dish. It also suggests the science behind the ability to "train" one's tastes to not miss a flavor by eliminating it for long enough.
