SW Road Trip - Roundtrip Riverside CA -Lake Havasu City, AZ - both 1-10 and 1-40

Help me out - my sweetie said lets go visit your friends in Riverside, CA and then take a drive over to see your cousin in Lake Havasu, AZ. Being from the land of few roads - there little we love more than a road trip - unless its a road trip with great food! So we're roundtripping on 1-10 and 1-40 and I want to reward him (and me too) with some decent food along the way. It doesn't have to be fancy - I'm looking for anything from a food truck to a diner to a 5 star.

And if you have ideas for great places in the Riverside or Havasu areas - chime in! Thanks!
