New Cuisinart Griddler -- suggestions please?

My wife got me a Griddler for Christmas, after a few years of not-so-subtle hints.

I've successfully done panini, pancakes, and a sort of meat / vegetables / cheese wrap so far.

Any ideas for novel or easy ways to use it otherwise? I seem to recall seeing that using it in panini mode is a really good way to do fish steaks.

I don't have a Griddler but I use my mini-Forman for quick grilled zucchini or other summer squash. Cut into thick slices, brush with olive oil, when done top with a squeeze of lemon, toasted pinenuts, and grated parmesan.

Also, grilled sausage, like Aidells. Slice in half lengthwise, grill some sweet onions alongside, bread or bun of choice.

Yes, fish steaks or steak steaks (as long as they are not too thick). As good as the outdoor grill? No, but for those of us in cold climes better than nothing in the winter.

Just bought the waffle plates to fit my Griddler, now I can throw out the old waffle iron and save some space.

i'm going to do the same to my Belgian waffle maker. Which doesn't work perfectly with most waffle recipes.
