Shrimp Tacos / Slaw

Tom P Jan 9, 2012 11:58 AM

I have some shrimp. I have some cabbage. I have some corn tortillas and an amazing vat of homemade guac. So shrimp tacos tonight. Would love to hear how people do them and also your recipe for slaw for fish/shrimp tacos. Thanks! (either grill or stovetop/oven recipes are fine)

We had some great shrimp tacos at the Epcot Food and Wine Festival a few months ago. Here are some links:

I really liked the Chipotle Mayo! Probably because I'm not supposed to have it...

Take a look at the recipe index page, you may find something else you like.

TomP it all depends on what's at hand. Love corn tortillas and one of my favorite toppings for a taco is a mix of raw cabbage, radishes, peppers, pickled onions and cilantro with a squeeze of lime.

I would dust the shrimp with S & P along with some fresh ancho chili powder or a blend of chili powders, cumin and a lite dusting of Wondra to dry the surface and give some color and texture.

I like to go simple with these ingredients. Just let the flavor of the shrimp shine through and the freshness of the veggies give some crunch and fresh flavors.

Scubadoo, thank you! Do you pan fry them with the wondra or do you grill them?

I think I share scubadoo' s style, and he is a grillin' rascal, but I doubt he means firing up the grill for the purpose at hand, it won't bring that much extra to the seasoned shrimp that cook very quickly. The added veggie texture (I'm newly enlightened to radish w/ tacos, but I like), color, and thermal contrasts with the still- hot, seasoned sauteed shrimp, in a nice warm tortilla, makes for a symphony. Go do it!

Right Veg. Even though the grill is close by I pan the shrimp till just done. A little rare is okay by me if they are really good shrimp. And radish just works. Rounds or matchstick they add a nice sweet, peppery note.

I like to make a cabbage salsa. The same shredded cabbage as for slaw, but with the kinds of seasonings that go into a fresh tomato based salsa, e.g. rinsed minced onion, cilantro, chile to taste, lemon/lime juice, etc.
