I'm interested in (learning to) making crepes and would prefer to make them gluten free. I've searched for some recipes but am not satisfied with my findings.
I made crepes recently using mochiko sweet rice flour instead of all purpose in my usual recipe. They turned out just fine, maybe a little bit more fragile from the lack of gluten.

i've seen"primal" recipes for pancakes using stuff like coconut flour, almond meal and flax, but that's not my cup of tea. perhaps google for a paleo/primal/low-carb recipe?
