freezing mac and cheese
Hi All. I'm new here. I'm planning on making mac and cheese for a crowd[maybe 40]. I'm using Inas' recipe for plain mac and cheese. What I want to know is can I make it ahead and freeze it? If so, do I have to defrost it first before reheating it? Also do I need to add more liquid to compensate for the reheating? I'm probably going to make 2 trays because there will be other food.
Yes, you can freeze it. But it'll freeze better if you vacuum seal it rather than just using a typical freezer bag. No, you don't need to defrost. Cover and heat in the oven (start with a cold oven) to thaw at a low temperature (I typically use about 200 degrees) until warmed through. Could take about an hour. You don't need to add more liquid because you're not going to heat it enough to raise the liquid temperature to the boiling point. Reheat to the oven temperature (use an instant read thermometer to gauge the proper temp.)
