Where can I buy golden syrup? I saw a recipe for British flapjacks that I want to make.

Someone on another thread mentioned that World Market carries Lyles Golden Syrup, I took note since I've seen recipes that called for it and that I wanted to make.

is a flapjacks recipe that uses honey. Since golden syrup is a mix of sucrose, fructose and glucose (sucrose broken into simple sugars), any syrup with a similar consistency should work, including Karo corn syrup (it is not exclusively glucose).
You could also make your own invert sugar by boiling a simple sugar syrup with a bit of acid.

Nothing on earth compares in *flavor* to Lyles Golden Syrup.
Yes Workd Market does carry it.

A tablespoon of Lyles eaten straight from the can is distinctive, but in baking (such as ANZAC biscuits or Perkins) that flavor is lost.

Have you tried Safeway or Albertsons? I haven't looked in Eugene, but you might find Lyles near the corn syrup or honey in the baking section.

You might also try Newman's on Willamette -- they have a lot of unusual imported things there. Or Market of Choice or Capella -- I have a feeling I've seen golden syrup somewhere in town, but I can't remember where.

In a recipe for an cookie that called for Golden Syrup, the author said that a combination of molasses and light Karo syrup would work. That was what I used, though Golden Syrup is available at Metropolitan Market in Tacoma. A friend who knew what the cookies should taste like said they were "spot on". Might be worth a try.
