Leftover Hoppin' John

So I'm trying to merge family traditions with my Southern husband and this year made hoppin' john along with pork tenderloin and biscuits so that we both had representations of our family traditions for new years (my family: pork & sourkraut; his: hopping john & rice). But with just 2 of us and a toddler, I have half a pound of hoppin' john leftover now (Emeril's recipe). Any ideas what to do to re-purpose it, rather than just reheat and repeat? I thought about making rice and adding shrimp, but hubby shook his head at the idea. Any other thoughts?

    Having just finished a simply re-heated bowl of mine, with a couple of cornbread sticks, I'm having trouble imagining not finishing the last of it before I get tired of it.

      I've thought of some in the FP and reducing it to much to use in lieu of frijoles or to spread on panini.

        I don't have any suggestions for you but I have had the same problem year after year. Generally we just eat leftovers until we can't look at them anymore, then compost the rest. That's why I declined to make it this year. I'm looking forward to suggestions, too.
