Baking in the cold questions about yeast.

I've tried to bake a few things this winter. My apartment isn't the warmest. Above 60 degrees, but below 70. I've tried to make 2 things so far, and the dough did not rise to double the size. Have any tips, for baking in the North West, in a not so warm apartment?

      I just moved to Eugene and it has taken me a few times to get my dough to cooperate. What I do is turn on the oven to warm for about 5 minutes or so and then place my dough in the oven to rise. I haven't had any problems with it rising properly.

        Use no-knead recipes that proof in the fridge. I guess they still need to rise after that, but I've not had problems and we keep the house no more than 68. Always a good idea to try fresh yeast.

          Heat some water in a microwave until it generates steam. Put dough in the oven together with the water. Repeat as necessary.
