When it comes to better imported kosher cheeses, the supply can be sporadic. It always appears that when it comes to the U.S. everybody has it and when it's out, it's out everywhere. I used to buy parmesan from Kosheritalia.com, but I just went to their website and they have no Italian cheese and the Zabar's site is out of it as well. All I can suggest is keep checking and eventually it shows up. Fortunately I can stock locally, but in any event I suggest when it shows up buy enough to last you awhile because of the gaps in supply. Parmesan hold up pretty well because it is dry and fairly salty, but you could also freeze chunks to extend shelf life.
Unless you are storing it a LONG time, I doubt you need the freezer. I've kept my open package in a Ziploc bag in the fridge and it's lasted for over a year. If I get any mold(very rare), I just shave off that edge and the rest is fine. If you buy a sealed shrink wrapped package, you should easily be able to keep it in the fridge for over a year without any issues. Remember, cheese was invented to preserve milk.
