I'll be dining at EMP a week hence and wonder if any 'hounds have been recently. I'm especially curious how Chef Humm has been using truffles.

White truffle is listed in the 2nd "row" of the menu, and is a $95 supplement to the prix fixe. It is choice of two pastas. The choices were a fontina tortellini (served with chestnuts when I had it about 1.5 weeks ago) or tagliolini with parmigiano-reggiano.
I did: crab (peekytoe salad, with avocado, roulade), white truffle (chose the tortellini, divine), duck for two, chocolate with salted caramel tart (I chose dark over milk chocolate)
My husband did: foie gras (he chose hot over cold), poached lobster, duck for two, blue cheese (served with pear)

We were there recently for a full dinner and for one of my courses I had the tagliolini with white truffles (GF had the tortellini w/ WT) and it was so out of this World good that we just went back and had the same thing at the bar (GF had a white truffle risotto).

Ah! I do prefer risotto with my white truffles. Pity it's only at the bar. Perhaps this gives me an excuse to dine there solo.
Kathryn, what was the warm preparation of foie gras? I presume the cold was a torchon?

I think you could ask for the risotto during regular dining in the main room.

It was seared but I don't remember what else was in the dish, sorry! I would assume the cold prep was a torchon.
