foie gras appetizer
Long story, but i have a jar of foie gras from Lyon that should be eaten. Is it too much to serve as an app if i'm making lasagna as a main course? my heart says yes, but i don't want it to go to waste.
Shouldn't be a problem -- especially if there's a little time between the heavy courses, and you go lightly with the foie -- just thin slices on lightly-toasted white bread (crusts trimmed). Dress it with a dab of fig or onion confit if you like, but so long as you're not laying out 3-4 ounces per person, it should be fine.
