Portland shrimp dish mentioned on Today this morning

James Oseland, editor-in-chief of Saveur, mentioned a shrimp dish that Portland gave us in 2011. They had an example of it on the set. It looked like the shrimp were presented on a bed of salt. The name of the restaurant that serves it sounded like "Vitalle's"?

Anyone else see this or have more info on this shrimp dish?

  1. The Chef is Vitaly Paley of Paley's place.. I saw a video recently that included him preparing shrimp baked in hot salt. Not sure where I saw it but it's likely that someone else here will be able to come up with the link.

THANKS! He spoke of it like it was the best food gift to America this year.

Was it a spotted prawn dish?

I don't recall that name being used...

the recipe was in Bon Appetit's Top 100 dishes mag a couple of months ago (or maybe it was Saveur?)
