I have a recipe that calls for boiling the calamari for an hour (or until quite tender) before stuffing and grilling. I don't have a lot of experience with calamari, but that sounds like a long time to boil it! Any thoughts??
squidimari becomes tender again after a long cook. An old cook name for them is something like "5 / 45's." They cook up tender quickly (5 minutes) and then get tender again in another 45.
This is true. I have made stuffed squid in which i boiled for 20 min then chilled, stuffed and simmered for 20 more min. It is not too long.
