Making latkes in advance

Can I grate the latkes about 4 hours before I serve them if I keep the potatoes in ice water in the frig? I would add the other ingredients later.
If I cook them 4 hours early do I have to refrigerate them?? I know they can be frozen; but I want to eat them tonight.

  1. I always make my latkes the morning of my dinner ( i make almost 200) that way I can clean my stove. After you let the latkes degrease on paper towels/brown paper grocery bags, lay them on a cookie sheet. I can get about 60 latkes per sheet standing up. Leave them on the counter. 10 to 15 mins before serving place the cookie sheet in a 400 degree oven for 10 - 15 mins. They crisp up nicely.

      Thanks. In other words you let them sit outside of the refrigerator all day.
