Great Persimmon Pie?

I have about 6 large, very ripe hachiya persimmons and was hoping to use them for my Christmas pie. The recipes I've found online have been less than inspiring -- they're either super plain or they include ingredients such as "1/2 cup bottled caramel syrup." I was hoping to find something with some spice and may try altering a pumpkin pie recipe, should nothing else seem right. Of course, if someone else has a tried and tested favourite, that would be even better!

    I like to puree some bananas with my hachiya persimmons and then make a pie out of it with some nutmeg, cinnamon, and mint.

      This sounds really good. I particularly like the idea of the mint -- I might have to see if I can pick some up today!

        You'd be surprised how much a bit of mint makes all the difference, and not just in persimmon desserts.
