I'm not sure if this exactly meets your criterea, but I make peppermint brownie bites that are really good. Regular brownie batter (homemade or from a box depending on how lazy I'm feeling) - add a tablespoon of peppermint extract. Bake in well greased or lined mini cupcake pan for half the time on the original recipe. While baking I enlist my kids to help me crush about 6 candy canes to tiny little pieces (not powder). As soon as they come out of the oven I put a small teaspoon worth of the crushed candy canes on top - they melt just enough to stick. Yummy and pretty.
