SR Rib Roast

Hey, I'm new and have a ?? I just bought a beautiful Standing Rib Roast from "Nebraska" and thawed it in the fridge expecting to use it this weekend. I am actually going to use it NEXT weekend. It is still in the shipping wrapper. What to do? Cook, Leave, Dry it out, Refreeze it?

You can leave it in its wrapper or unwrap to give it a little dry aging. If you Dry Age you'll probably have to trim it a bit after a week to take off the parts that have dried out and turned brown. But what's left will be great.

So, what happened?

It was great. I roasted it and put it inthe fridge med rare last sat. I took it out and sliced it and braised it in a turkey roaster till it was warm and juicy. Wow.
