SR Rib Roast

Hey, I'm new and have a ?? I just bought a beautiful Standing Rib Roast from "Nebraska" and thawed it in the fridge expecting to use it this weekend. I am actually going to use it NEXT weekend. It is still in the shipping wrapper. What to do? Cook, Leave, Dry it out, Refreeze it?

        It was great. I roasted it and put it inthe fridge med rare last sat. I took it out and sliced it and braised it in a turkey roaster till it was warm and juicy. Wow.

      2. You can leave it in its wrapper or unwrap to give it a little dry aging. If you Dry Age you'll probably have to trim it a bit after a week to take off the parts that have dried out and turned brown. But what's left will be great.
