How do you season your chickpeas (when cooking dry chickpeas)
I love chickpeas, but am getting kind of tired of the flavorless canned variety. Soooo, it's time to buy a pound of dry beans and make them sumbitches taste great!
However, I have a problem...I don't know the best way to season them.
I did a great job once, but can't remember how I did it, and haven't been able to recreate it (I used onion, garlic, carrots, celery, and maybe thyme and bay leaves).
If possible, I'd rather avoid fresh herbs. Yeah, they add a LOT to it, but I can't justify spending $4-$5 on fresh herbs I'll use once on a pound of beans.
So, tell me, how do you like to season your chickpeas?
Oh, I'll generally be using them in curry type recipes, if that matters.
