Jean Georges Foie Gras Brulee
Hi there,
two years ago, I had foie gras brulee at Jean George and was simply overwhelmed. For this years christmas dinner I'd like to produce something at least similiar at home - do you have any idea how he does it?
I posted this accidentally in the new york board first, sorry for asking twice.

I think that he just Brulees a slice of Torchon with brown sugar. He varies the accompaniment according to season and whim.
