Help me find a Cranberry & Orange Cake recipe that replicates the taste of the C&O starbucks muffin...

Every year I have to have at least one C&O muffin from starbucks, I love the sourness of the cranberry against the sweet cake and the moist little pockets of orange - not bitter, just tangy and orangy - which stop the muffin from being boring to eat.

Any ideas on how to replicate?? I would really prefer to make this as a cake but not sure how to get a really good orange tang going apart from a syrup. How does Starbucks get the the orange into the muffin???? I wonder.

Does anyone have a great tried and tested recipe? The muffin contains what tastes like whole cooked cranberries, not a (tasteless, papery) dried cranberry in sight.

Smitten kitchen has a cranberry upside down cake that could easily be flavoured with a little orange but I don't think it is quite right.

Happy to try a muffin recipe too. But I'd love a cake.

  1. I haven't had the Starbucks version, so I can't compare, but King Arthur Flour's cranberry muffin (http://www.kingarthurflour.com/blog/2...) is just awesome. I used OJ instead of the tomato juice and the OJ flavor was subtle but really nice. You could probably add some orange zest to boost the flavor. At Thanksgiving, I made this as a cake, but I think it's better as a muffin.

    1. I don't know what Starbucks's muffin is like but you could try Smitten Kitchen's version of Ina's lemon yogurt loaf w/ blueberries and use orange and cranberries instead.

        I'd use orange zest.
