Help with my 中文, please!

Hi there, I've just recently returned from the big city with a truckload of ingredients from the local Chinese markets. I have a few question about the ingredients.

Are there any native Mandarin speakers out there (from 四川省 would be even better) who would be willing to help this white quy with his passion for 四川菜?

For example, I have a bottle of sauce from Laoganma with the first two characters 肉丝 which I think is pork, but what is the difference with 猪肉, whick I think is pork as well.

The product is 肉丝豆豉油辣椒

Please help.

Just wanted to show my first attempt at 鳳爪, they were great!

      First, I don't really care for Sichuan cuisine. Second, I don't care for Laoganma.

      Now back to your questions. Words for words, 肉丝 (肉絲) means meat strips. When not specified, meat (肉) refers to pork (猪肉). If you add the word chicken in front, then it becomes chicken strips 雞肉絲. Again, when not specified, then it is understood to be pork.

      猪肉 literally mean pig meat, therefore pork. It is a more general term and does not describe the shape.

      As for your product, 肉丝豆豉油辣椒, it is pork strips with fermented soybean oil chili pepper.

        Thanks for the help.
        I am always looking for new ingredients and new condiments. I live about 700 miles from the nearest Asian grocery store, so when I get the chance, I buy quite alot. Do you have any suggestions for interesting condiments/ingredients?
        What style of cooking do you prefer?

          I was mostly teasing you anyway. I prefer Cantonese cuisine over Sichaun cuisine. These two have major rivalry. I do know many people like Lao-Gan-Ma -- a very popular brand.
