Refrigerate Cookie Dough

Is it okay for me to refrigerate cookie dough overnight when it is already on the baking tray? Do I have to cover it with plastic wrap? I thought I'm going to bake the cookies today, but I couldn't even though I have cut the dough and put it on the baking tray. Thank you.

    absolutely. cover it so it doesn't dry out. many find a day or two of resting the dough improves cookie flavor. you could even freeze them like this.

    however, do not put the cold pans in the oven. that will make steam and affect cook time and texture of the cookies.

      I have done this with no problem. I put the sheets into clean plastic grocery bags. which I reused afterwards as garbage bags.
