Need spinach lasagna recipe

Looking for an outstanding spinach (or other vegetarian) lasagna recipe. Having group over for dinner and discovered that there will be a few vegetarians. Want something really delicious, ideally reasonably firm so that portions will keep their shape and not run all over plate, and hopefully not too complicated to make. Help!

    Just an FYI for keeping the portions tidy. Heard about this, never tried it, but it seems like it might work. Layer the noodles lengthwise for the bottom layer, then crosswise for the next (trimming as necessary), then lengthwise for the next, and so on. All lasagna needs to rest for a bit, but I'm thinking this interlacing might actually keep the slid-age to a minimum.

    Anyone tried this?

      I've always criss-crossed the noodles and I don't think this really significantly affects whether portions hold the nice block-like form which I prefer. It has more (I think) to do with the wetness of the ingredients and/or the use of thickening ingredients...like amount of flour in the bechemel or egg mixed into ricotta (if either is used). It's pretty tricky because one can over dry or thicken ingredients resulting in a beautiful looking, but dry, lasagna.

      Whatever recipe that you make add a layer of pesto in there and it will really make it fabulous! You can drain some ricotta ahead for filling if you want it to be a bit thicker.

        There is a recipe in Foods of Italy by Bugalli that is the only lasagna I make. Homemade spinach pasta, fresh mozzarella, ricotta mixed with butter and parmigiano, simple tomato sauce of milled tomatoes, olive oil and garlic. Layer, ending with pasta and a smear of sauce/olive oil on top. Fresh, rich and light.

          Astonishingly (is this a word), our veg family members and friends really like the spinach lagagna recipe in back of the Golden Grains lasagne noodle package -- it's everything you wanted in your description.

            Looking at the Golden Grains website, the spinach lasagna rolls are prominently featured. Is this what you are referring to? I was thinking more about a pan of lasagna, but if the rolls are really great, I guess I could do them.

              It's been awhile, but the box itself had a recipe for meat lasagna and a meatless variation using spinach...
