Napa: Model Bakery's beignet "English muffin"
I really like what Model Bakery calls an English muffin. As good as it is, I have no clue why they call it that. There are no nooks or crannies. It is made of brioche dough, reminds me of a savory beignet and has an oily coating like foccacia.
The first time I ordered it when I got home, I thought they gave me the wrong thing. I gues Chef MIchael Chiarello of Bottega restaurant made a big deal about them on the food network. I agree they are great. They are just not English muffins.
Also in the category of good if not authentic are Model's bagels. They are bready chewy and soft but in a good way. They also taste yeasty. I liked these as well.
Another thing I tried that was new to me was the quiche which I thought was excellent with a rich custardy filling and buttrery crust ... and it actually was a quiche.
