Candy Cap mushrooms
Candy Cap mushrooms are a West Coast mushroom that smells like maple syrup especially when dried. Chefs often use them in desserts. This seems the best use I've seen in a dessert ... real mushrooms on a yule log.

I did zero research and just fried some up. I just vaguely remembered they were sweet and could be used in a desert.
I just fried them in butter. There was a slight sweetness, but it probably wasn't the best prep. They can also be used in savory dishes. This link has two recipes: Candy Cap creme brulee and Candy Cap mushroom leek tart.
