Eggnog cookies

Granted, my computer was wonky yesterday, but can't find this thread I began. Mods, if it was poofed for some reason, please let me know.

I'm looking for an eggnog cookie recipe, but unfortunately, it has to work with soy-based eggnog (Silk) 'cause of some guests are seriously lactose intolerance. Can I just sub Silk for liquids in a basic sugar cookie? Somehow that seems it'll be a lesser flavor than I'm looking for. Thanks for any help!

    Lactaid makes an eggnog - have you taken a look at that? I am lactose intolerant, as well, and have been using Lactaid for years for all my drinking and cooking.

      I also remembered that I have Bickford's "eggnog flavor" extract, so that, along with amped up vanilla and eggnog, should help. I've seen lots of recipes on the web, and may use various ideas to come up with my own version. A goodly shot of rum never hurts, either!

      Google "eggnog cookies" - there are lots of recipes out there, from soft to crisp, rolled to drop. once you find one that looks good, just sub the soy eggnog for the regular stuff and, as BBL suggested, amp up the vanilla & nutmeg. you could also add a drop of rum extract.

        If you're worried about too subtle a flavour, you could always add extra vanilla and nutmeg. Those seem to be the dominant eggnog tastes.
