Sausage making courses

I'm trying to find a sausage making course in the New England area. I missed one in York, Maine at Stonewall that was held on November 19th. Any one have any suggestions?

    I agree . You don't need a course. If you have a good meat grinder ( I use my Kitchenaid) and a sausage tube you're in business. You can buy casings at Stop and Shop, and probably Shaws.

      There must be one offered somewhere. Does Barbara Lynch have a butcher shop in the South End ( it's been a few years since I've been there). You might check with them or one of the butcher shops in the North End. It's such a hot topic right now someone in the Boston food circles must know. Isn't there a New England Culinary School Boston or am I dreaming?

      Actually have Charcuterie. Trying to fine tune the techniques of sausage making and expand the horizons. Thought a one day course might be helpful.

            Get a copy of Charcuterie by Michael Rhulman and spend an afternoon teaching yourself.
