Will any Manhattan fish markets grind fish to order?
I'm idly considering making gefilte fish. I do not have a food processor or anything else that will grind fish, just a hand blender and a coffee grinder and a nice collection of knives. Obviously, I should buy live carp in Chinatown and then take them home and kill/scale/gut/filet/grind them myself, but that might be more appropriate for my second try at gefilte fish, not my first. Ideas?
