Vegan Latkes with Simple Ingredients?

Does anyone have a recipe for vegan latkes (potato or other) with ingredients that would be easy to find in Israel and preferably not too expensive?

  1. You really just can leave out the egg. It works fine.

      I agree but make sure you use a high starch potato like a russet

          Sounds good. Do you think I should add more potato starch to compensate for the watery Israeli potatoes? Have you tried the roasted applesauce?

            I don't think it would hurt to squeeze some of the liquid out of the potatoes after you grate them. Just wrap them up in a kitchen towel and squeeze the bundle over the sink. That might help a little. I have not made the roasted applesauce. It's become a tradition in our family to make pink applesauce on Chanukah - boil together apples, sugar, whole cranberries.
